News: Danish restaurants unite for down-to-earth dining

Two members of the TL&CC Collective are joining forces for a relaxed dinner series focused on quality ingredients and summer wines.

Danish restaurants Domestic and Hærværk are bringing their culinary expertise to Cold Hand Winery in Randers, Denmark. From 11 July until 3 August, the two eateries are heading to the countryside for a pop-up restaurant that will be open for three-course lunches and five-course dinners.

Located in an idyllic rural setting at an authentic Danish winery, the space includes rustic wooden furnishings, an outdoor kitchen and a bonfire. The menu will be centred on premium ingredients cooked over an open grill that highlight both restaurant’s cooking aesthetics.

Dishes are designed to be shared among guests in a casual, cozy environment, and the food is matched with wines and other drinks made from Danish fruits and berries, including a sparkling rhubarb wine and an apple wine.

Domestic’s head chef and co-owner Christoffer Norton says the pop-up’s concept is not about fine dining or formality. “Expect a different gastronomic framework that will challenge the senses,” he explains. “Expect it to get a little cold when the summer sun sets. Expect some smoke in the eyes. Expect to sit at a long table amongst people you may not know. Expect an authentic and heart-warming experience.”
