Kaupé opened its doors in 1990 in the world’s southernmost city, located 3,100 kilometres south of Buenos Aires. From the very beginning, chef and owner Ernesto Vivian and his family had clear ideas. They understood the extraordinary value of the region’s produce. The Vivians bet on the produce of the South Atlantic, on the marine creatures from the deep, icy waters of the Islas Malvinas, Ushuaia Bay, and the Beagle Channel. Vivian was a pioneer in the discovery and development of the culinary value of Patagonian seabass. His menu always includes sublime southern king crab and Patagonian scallops. When the time of year, closed season, and local fishermen allow, succulent sea urchins and fleshy cold-water mussels make an appearance too. The cooking is both classic and simple, with no foams or gels. The only objective is to present the produce in the most natural way possible.
