“Quality comes first, which for us means organic and regional products. Our kitchen combines vegetarian dishes with meat and fish dishes, always focusing on authenticity. Our products are always explained and guests can even visit our producers and join them in the production. Our menu features organic wines from Austria, Italy, and Slovenia.”

Der Daberer is one of the pillars of sustainable gastronomy in Austria. Owner Marianne Daberer is proud to be a founding member of the Slow Food Convivium Alpe Adria, a certified organic network which organised the first Slow Food market in the Kärnten region in 2018. They work together with kindergartens and welcome the youngest gourmets their hotel. Products are sourced from many suppliers in the region which specialized in cheese, corn, vegetables, and more. But Der Daberer is not only a restaurant, it’s a hotel with a natural pool and natural pond as well. And the breakfast? A gourmet meal with organic products and freshly baked bread made from scratch in their own bakery – not to be missed.
