"We are located in the largest, northern-most major city in the world, yet our menu is dictated by local products. Our growing season is three-to-five months a year, at most. This poses a challenge, but also a great distinctive opportunity; preservation (and thereby also low waste) is absolutely crucial to us. We do not support local winter greenhouse products given the amount of fuel they require to run in such a cold climate. Although we are located in a cattle-rich area, we only serve red meat on occasion."
Nine types of beans with mussel stock sauce emulsified with smoked butter; ling cod with XO sauce and black kale glazed in housemade yellow pea miso; and salty jersey milk ice cream and our own maple syrup.
