Silvestre

What they say

“We are highly passionate about our culture, tradition, and local producers, utilizing these elements to generate a memorable experience. This is what we are about. We are helping lower carbon emissions by buying produce in the local markets, and reduce food waste by reusing the leftovers as feed or compost.”

Signature Dishes

Chocolate with cashew, guava, and corn; homemade ricotta and scallion empanada; and peach palm with mayonnaise.

What we say

Silvestre is located in a restored iconic art-deco house. It has an innovative liaison with the country’s culinary culture and traditions. They care for the environment and support local growers engaged in offering high-quality produce, while keeping sustainable organic practices. They provide food that is rooted in traditional gastronomy, but expressed in a new, contemporary language. Through a tasting menu, called “Environmental Awareness“, they evoke the most significant challenges that Costa Rica has as a green country – to generate consciousness and show that every person should be part of the change. With the bill, one gets a tree seedling as a gift to help bring local plants back to the area. A fresh and heart-warming way to end a meal.
