“We are lucky enough to be in the heart of the West Country on the Dorset/Somerset border, where we are spoilt for choice when it comes to local produce. We use ethically sourced, high-quality ingredients. We know our suppliers personally and are able to visit their businesses and farms: Harry’s Cider, Montgomery’s Cheddar, Dorset Blue Vinney, Professor S. J. Eykyn eggs, and many more are all on our doorstep. We work on people’s strengths while accepting their imperfections.
“Sasha grew up in the Caucasus mountains, an area of Southern Russia particularly abundant in local produce. He has always been passionate about growing and foraging for food and spends as much time as he can with his family on the hunt for ingredients.”
Cornish mackerel escabeche on borodinsky toast; puy lentil ragout with roasted sunchoke; and wild garlic and meadowsweet mousse with walnut praline and Dorset sea buckthorn berries.
All the foraging and devotion to local produce comes from the heart and soul here, not from a blind following of fashion. The ingredients are unimpeachable and the sly Russian twists are a delight.
“The food is thoughtful and inventive, most of it based on locally sourced meat, game, fish, vegetables and fungi. An accomplished forager, Sasha knows where to find cepes and truffles. His ham hock was at least as good as any I have eaten, even when it was called jambon persillé in Burgundy.” –Bruce Anderson, The Spectator
