We are really fortunate to be based in Rutland, as the location is bursting with incredible suppliers, farmers, artisans, poachers, foragers, and more. Aaron has a long history of living and working in this area, so he has the pleasure of knowing them all extremely well. Short rib of beef cooked for thirty hours with horseradish and red wine sauce; seared tuna belly with shiitake, and lightly pickled vegetables; and salad of crab, yuzu, and granny smith apple.

What we say

Dining in a fairy tale Victorian hunting lodge overlooking a gigantic lake in the heart of hunting country would be a joy beyond measure even if you just ordered in pizza. But since opening as a country house hotel in 1979, Hambleton has been serving some of the best food in England. Aaron Patterson began here as a sixteenyear-old sous-chef and returned as head chef in 1993. That he holds Britain’s longest-running continuous Michelin star is no surprise. That he does not hold two is a scandal.
