“This territory has given us everything. In 1983, long before green and vegetarian cooking became fashionable, we began offering a vegetable-focused menu where beef was absent, a sort of sacrilege in the beef-producing Aubrac. We revived the menu in 2007, featuring shoots, herbs, vegetables, roots,and flowers that are harvested every morning from our garden in Lagardelle. Other tasting menus include Aubrac beef, milk-fed lamb, and fish.”

Chef Sebastien Bras took over from his father Michel in 2009 and passionately continues the Bras family commitment to a healthy, profoundly local and seasonal cuisine that’s a delicious reflection of the Aubrac in France’s Auvergne region. In 2017, Sebastien Bras renounced the three stars the Michelin Guide awarded to the family restaurant in 1999, because “the most beautiful stars are my clients, and I wanted the freedom to continue expressing my love for the Aubrac with a relaxed state of mind”. Le Suquet was awarded a European Ecolabel in 2013 for adhering to its pan-European charter of ecological regulations.
