The food of Goa gets a bad rap in much of India. Because Goa is now so heavily tourist-dominated, most restaurants serve banal versions of the local cuisine: a basic fish curry, or perhaps a Pork vindaloo, made without the right vinegar. O Pedro throws out the Goan food clichés and creates new dishes that play on traditional flavours. Every ingredient is sourced from Mumbai or Goa. There are no packaged or frozen foods and most suppliers are artisanal. Even the beer comes from two craft breweries who offer a better lager than the big beer brands.
