“From the earth to the plate“ is the slogan, or rather the philosophy, that sums up the style and cuisine at Meo Modo in Borgo San Pietro, an inn immersed in the heart of Tuscany. Andrea Mattei is the author and interpreter of his creations; the culinary offer is rooted in a regional cuisine whose ingredients are found in the vicinity, cultivated and harvested on the Borgo Farm and a nearby farm. This ensures that the origins of each product is easily traceable.
Working together, they take care of the vegetable garden and the hundreds of species of vegetables, flowers, and aromatic herbs found here. This is the base of all the dishes proposed in the restaurant: first of all salads, although it would be necessary to create a new term to indicate this mix of herbs that complement and enrich all the meat and fish dishes. Daring, original choices are welcomed by those who love the discovery of different universes of flavours.
