As the name suggests, the ‘big blue’ is the main protagonist of this restaurant. Chef Hans Neuner has spent the past ten years discovering Portuguese cuisine and nurturing a special relationship with a careful selection of Algarve’s fishermen and farmers. Hans only uses fish which has been caught by single lines on small wooden boats. Sardines have been banned from the menu for two years because of their endangered status. He has his own herb garden by the cliffs where the restaurant is located, and the menu changes every two weeks to keep up with available produce. Neuner recently admitted that “It’s an everyday adventure to work here, because, and even after ten years of being in Portugal, I am still discovering Portuguese cuisine“.
