What we say

Whether you live in the Hudson Valley or are simply visiting for a weekend, Gaskins is worthy of a detour. The large and light-flooded restaurant in Germantown, run by husband and wife Nick and Sarah Suarez, puts community first at every turn. Produce for dishes like chicory salad with buttermilk and house-made cavatelli with oyster mushrooms and grilled ramps comes from farms in Columbia and neighboring Dutchess county. Grass-fed beef for their signature burger hails from the nearby Kinderhook Farm, which only raises pastured meat. And the kitchen regularly welcomes guests like writer Tamar Adler to collaborate with them for special meals.

Since opening, the team has used the restaurant to raise awareness and funds for social change, to advocate for LGBTQ and women’s rights, and the Black Lives Matter movement, proving community for a restaurant extends well beyond the plate.
