At the café, frequently changing menus employ the best of local agriculture – including SHED’s own biodynamic farm – in generous, endlessly creative ways: the chef might tweak a wild king salmon with fermented green garlic, team Mendocino urchin with satsuma, wood sorrel, and kumquat, or pull a Swiss chard and bottarga pizza from the wood oven. SHED also mills its own flour and makes fermented products, some of which are available to buy as delectable mementos of Sonoma’s terroir.
