“We are passionate about pastry. We strive every day to become better bakers and cooks by choosing to work with thoughtfully sourced and ethically produced ingredients, by paying intense attention to every step of our baking process, and by being good community members through exemplary service to our customers and to our staff alike.”
Croissant: soft in the middle, buttery, sweet, malty, light and layered; galette: mixed with Carolina Ground rye flour with seasonal fruit filling; quiche with house-made local crème fraîche, local free-range eggs, seasonal vegetables, and local cheese.
From airy gougères to buttery kouignamann, O'Brien's guiding light shines through – using the best ingredients grown by community farmers in a fulfilling work environment designed for stable careers. With ninety percent of the bakery's produce being sourced locally, customers can count on local milk, honey, peanut butter, and cheese. Compostwheels picks up the food waste, which goes to farmers' fields. The bakeshop is also community-minded and organizes a citywide "cookie grab" to benefit Planned Parenthood Southeast, which has raised $26,000 over the past two years..
