Minding the Gap

The sixth MAD Symposium explored how to create a more fair, sustainable and ethical restaurant world.

Noma chef and co-owner René Redzepi’s ground-breaking culinary symposium has just wrapped in Copenhagen, Denmark. Launched in 2011 by Redzepi as a two-day symposium, the event unites chefs, restaurateurs, writers and servers from around the world to discuss the future of food.

‘Mind the Gap’ was the theme of the 2018 symposium, which explored how the restaurant industry can become fairer and create more opportunities for minorities across the globe. “This year we’ve seen the restaurant community – and the world at large – rocked by stories and experiences of women, of immigrants, of minorities,” the organisation explained on its website. “We now see our friends, collaborators, and colleagues asking how – as individuals and as an industry – we can create a world where opportunities are available to all people.”

Hundreds gathered over 26-27 August to engage in conversations and workshop ways to generate a more equal, healthy and sustainable international restaurant community. Through panels, learning exercises and keynote speeches, the sixth MAD Symposium celebrates diversity and examines how we can eliminate inequalities in the food industry.
