“Our dishes are created out of a passion and desire to eat interesting yet tasty dishes. But it’s more than the food itself. That passion extends to us working with our team (without them we’re nothing) and watching them grow and develop a love for ingredients. The food itself is ultimately the biggest reward. We also work very closely with a couple of suppliers who grow speciality items for us, and help us ensure a high standard of produce is being used in our kitchens. We take regular trips to the farms to discuss new items being grown and to look over the farm itself.”
