What we say

Chef Kieran Morland and his Merah Putih team are passionate about Indonesian produce, authentic flavours, and high quality ingredients, but while you might think Merah Putih is a stuffy fine-diner from the majestic high-ceilinged space, guests are encouraged to follow the convivial Indonesian tradition of eating family-style and sharing plates. The menu features both traditional regional specialties and modern imaginative dishes, all crafted from the finest local produce and headiest aromatic spices. Wash it down with cocktails from the stunning bar, which mixes signature drinks concocted from fruits from Bali’s northern hills. As much thought was put into the breathtaking architecture and design as the food and drinks, with an eco-friendly structure showcasing local talent and craftsmanship, while considering the environment. Solar-filtered glass walls let light into the lush landscaped interior yet keep the heat out. Translucent columns capture rainwater and channel it into a water-flow system, while advanced UV filters purify and recycle the water, removing the restaurant’s need to use precious groundwater.
