“As an immigrant, I’ve always had a passion for introducing the good side of Chinese cuisine to American society. I want to help people recognize the benefits of Chinese cuisine as healthy, fresh, simple, and sustainable.

“When we established this business, we tried making it a place that educated people about Chinese cuisine and that acted as a window into the Chinese culture. We don’t exclusively hire Chinese cooks; rather, my goal has been to hire and teach Americans to cook dumplings. I’m happy to say that I’ve achieved this goal. We have Americans who can make perfect dumplings that, I think, would even rival some Chinese.”

In her new location, a sparse, modern space in downtown Little Rock, chef/owner Lisa Zhang is bending the minds of Arkansas diners by offering “a mouthpiece for traditional Chinese cuisine“. Dishes like ban mian, or tossed noodles, vegetarian dumplings, and hongshao beef noodle soup are challenging customers – but also bringing them back. The menu at Three Fold is dairy-free and a third of it consists of vegetarian or vegan dishes. And Zhang takes pride in cooking without MSG. “We put a lot of thought into our menu design, and not just so that we can please our customers’ taste buds, but also to cultivate and educate them“, she says.
