"Provenance, quality, and consistency of ingredients in a friendly and relaxed dining environment. Seasonal produce is reflected in our small plates menu and we source locally when possible. Cobble Lane, a really great British charcuterie supplier, uses the highest welfare British meats, which we love to support on our menus. Our products are all cut, cured, smoked, and hung by us, at our butchery in Islington, North London."
Watermelon and heritage tomato salad with crumbled British feta, and basil oil; Islington saucisson and Parmesan chunks British free-range pork; and the Debauchery Burger with Wagyu beef and rare-breed beef, Ogleshield cheese, confit shiitake mushrooms, onions topped with shaved truffle and a buttermilk bun.
This place launched in the autumn of 2014 at what we can now see was the moment of "peak burger" and went out of its way to do everything just that little bit better. When we went, we were tickled to find not just "today's beef", which was Dexter, but "today's wood", which was silver birch. Yes. Truly. They were telling us the flavour of the wood they would be burning under our lunch. Although obviously we would have been able to tell that just from the flavour of the char lines on the burger. We jest. We love that they take their work so seriously. So do we.
