“We want you to enjoy a space that feels comfortable and honest and let you have a great time, but also highlight how modern sustainability can be delicious, luxurious, and not about sacrifice. We love the people behind great food, and we want to champion them and how they’ve helped us create something fun and different. In essence, aiming to not just have a considered impact, but to have a very positive one.”
Jersey Royals with blood orange and turbo whey; beeswax old fashioned; and rhubarb with parfait, miso caramel (made from Scottish barley), and toasted British quinoa.
From a team with previous experience mainly in bars, this brilliant little restaurant took East London by surprise when it opened late in 2017. £60 buys you a no-choice tasting menu of crazy-fantastic platefuls matched to wonderful cocktails, of which you get about four or five and then lose count. A lot of the ingredients are potential waste items, you eat off tables made from recycled yoghurt pots, and the vibe is a level on from mere supper club or pop-up: this is a freaking house party! It’s all so beautiful, we could just cry.
Comfortable and fun; sustainability can be easy and delicious
