“Wahaca was born from a love for the flavours of the markets of Mexico – it’s the most incredible, fresh, and vibrant cuisine in the world. Wahaca is the first carbon neutral restaurant group in the UK. We’ve always worked hard to ensure we’re minimizing our impact on the environment and reducing our carbon emission. To take that to the next level, we’ve committed to converting any carbon we’re not able to eliminate into funds that are donated to communities in Mexico – to build more efficient cook stoves, which allow them to reduce the amount of fuel they burn and reduce the amount of harmful fumes they are exposed to.”
Chorizo and potato quesadilla with Trealy Farm sobrassada; fish tacos with sustainably sourced MSC-certified cod lightly battered and served with shredded slaw, chipotle mayo, and house pickled cucumber; Mexican bowls with salsas, slaw, herb-spiked rice, and slow-cooked Yucatecan pork or roasted vegetables.
When a restaurant group as big as Wahaca shows a commitment to something as radical as carbon neutrality, you know we are at a tipping point, when restaurants really can begin to change the way we think about the world in which we live. As for the food – creative, flavoursome and delicious. Need we say more?
