José Pizarro, one of the London food heroes of the century, used to be head chef at Tapas Brindisa, the Spanish import company that did so much to bring great Iberian produce to the UK. In opening his Bermondsey Street restaurant he took that import principle further, bringing serious Spanish vibes to a tapas scene that was previously derivative and moribund.
